Surprising Dill Pickle Soup

Nothing is easier than this unique go-to dill pickle soup, and the fact that it tastes amazing and is loaded with veggies is such a bonus! Who knew dill pickles could be so versatile?

Ingredients

  • 1 cup cauliflower florets
  • 1/2 cup chopped dill pickles
  • 1 ShiftSetGo Cream of Broccoli Soup Mix
  • 1-1/2 cups low sodium vegetable broth
  • 1 cup packed baby spinach, finely chopped
  • Sea salt and black pepper, to taste

Instructions

    Steam cauliflower until very tender, about 10 minutes. Place in a blender along with the dill pickles, broccoli soup mix, and vegetable broth. Process until smooth. Transfer to a medium saucepan.

    Heat soup over medium heat just until simmering. Remove the pan from heat, and add the spinach and a pinch of salt and pepper. Stir to combine.

    Serve immediately.

Tips

Add a diced green onion for garnish. Serve with warm brown bread with a drizzle of olive oil for another shift meal and daily oil serving. SSG notes (per serving) - SSG meals: 1 - Veggies: 2.5
