
Heart-healthy black beans are combined with corn, red pepper, and cilantro for a zesty vegetable chili salad that literally comes together in minutes! Great for a work lunch or a side at your next potluck!
Ingredients
- 1 (14 oz) can black beans, rinsed, drained
- 1 (7 oz) can sweet corn, rinsed, drained
- 1 red bell pepper, seeded, sliced
- 1 bunch cilantro, coarsely chopped
- 5 oz hot salsa (or mild if preferred)
Instructions

In a medium bowl add the beans, corn, red pepper, cilantro and salsa. Stir to combine. Serve or store in an airtight container for up to 3 days.
